1. Open Ricotta Avocado Toast with Poached Egg 

This heart-healthy breakfast has plenty of protein and nutrition for breakfast in only 269 calories a serving. It’s delicious and packed with flavor – you’ll feel that you’re eating a flavorful, healthy meal in the morning.

The creamy flavors emerging from this recipe are on point. Creamy Ricotta Cheese, smashed Avocados, drizzled with sweet but spicy Harissa sauce, finished off with a poached Egg and runny yoke is one of the best meals that you can make. Seriously, nothing beats the taste of this dish!

Ingredients:

  • 1 slice of toasted whole wheat bread
  • 1 teaspoon white vinegar
  • 1 egg
  • 1 tablespoon ricotta cheese
  • 1/2 avocado (mashed)
  • 1 tablespoon harissa

Recipe:

Fill a pan with water and bring to a boil. Add the white vinegar to boiling water, crack the egg and add it to the pan of water then cover and continue cooking for 4-5 minutes. Toast the bread until it is lightly browned. Add a layer of ricotta cheese and mashed avocado to toast, then drizzle with harissa. Once your eggs are done, drain them and place on top of the toast that you’ve assembled to make your sandwich. 

2. Baked Egg in Avocado

Eggs are a budget-friendly, high-quality protein that also contains all sorts of vitamins and minerals. That’s why I love using them for breakfast. Not only are they quick to prepare but they are full of all the nutrients your body needs for breakfast. It makes a healthy, sustainable meal.

Stop with the sugary cereals, processed breakfast burritos, and other fake stuff – simply start your day off right with this dish and it has 240 calories per serving.

Ingredients:

  • ½ medium avocado (pitted)
  • 1 egg
  • Seasalt & pepper 
  • 1 tablespoon chopped chives

Recipe:

Preheat the oven to 425 degrees. Scoop out the avocado from the center to make room for the egg. Break the eggs in a bowl and spoon the egg white and yolk into your avocado. Place on a baking dish, bake in the oven for 15 minutes. Check that egg whites are cooked and remove from the oven. Season with salt, pepper and add chives. 

3. Avocado Quesadillas

Crispy on the outside and creamy on the inside, these Avocado Quesadillas make a tasty dish for your kids to enjoy. The award for “most requested lunch” in our house has to go to these Avocado Quesadillas. 

I have been making them for years now and they still remain a firm favorite. They have 180 calories per serving.

Ingredients:

  • ½ avocado
  • 1 teaspoon lemon or lime juice
  • Salt to taste
  • 1 teaspoon butter
  • 1 tortilla
  • ¼ cup of grated mozzarella

Recipe:

Mash half an avocado with the juice of a lemon or lime and add salt. Melt butter in a small saucepan over low heat. Lay the tortilla into the pan and sprinkle mozzarella on top. Heat the tortilla until the cheese is melted and brown spots appear on the bottom. Spread the avocado mixture over half the tortilla and turn off the heat and fold the tortilla in half, slightly pressing down. Then, cut into wedges and serve.
